Delicious homemade soup made with asparagus, vegetable stock, pint creams, served with croutons.

Asparagus Soup Recipe

Ingredients:
30 heads of asparagus
1 quart vegetable stock or vegetable water
1/4 pint cream (optional)
seasoning

How to make {actual-title}:
  • Cut the tips off the asparagus heads and keep them for garnishing.
  • Clean and cut the stalks into pieces and bring to the boil with the stock.
  • Simmer for 1 hour, then rub through a hair sieve and heat the puree once more to boiling point.
  • Add seasoning to taste, and the asparagus tips, and cook slowly until the tips are tender-about 10 minutes.
  • Just before serving, add cream, if liked, and reheat, but do not allow to boil.
  • Serve with croutons of fried bread.
