Brown Vegetable Soup Recipe

Ingredients:
1 small head of celery
2 small onions
2 small carrots
2 small potatoes
2 small tomatoes
2 oz. Dripping
2 oz. Flour
1 quart brown or bone stock
salt and pepper
Bouquet garni (as for Brown Stock)

How to make {actual-title}:
  • Wash, peel and cut the vegetables up small.
  • Fry the onions in the hot dripping until slightly browned.
  • Add flour, stirring well into the fat, then stock, bouquet garni and all the vegetables are quite tender.
  • Sieve, reheat and season to taste.
  • Serve with croutons of fried bread.
