Brussels Sprouts Soup Recipe

Ingredients:
1 lb. Brussels sprouts
1 quart white stock
1 level dessertspoonful finest sago
1/2 pint milk
pepper and salt
green colouring

How to make {actual-title}:
  • Melt the butter in a saucepan, add the flour and mix well together, then add the stock.
  • Boil Brussels sprouts in salted water till just tender, preserving the colour, and rub through a fine hair sieve.
  • Add to the boiling stock and season.
  • A dish of cream added just before serving is a great improvement.
