Enticing taste of onion with egg yolks, cream and whole meal flour.

Cream of Onion Soup Recipe

Ingredients:
1 quart milk
6 large onions
2 oz. butter
a little salt
1 tblspful brown or whole meal flour
2 egg-yolks
a little cream

How to make {actual-title}:
  • Peel, scald and slice the onions, and cook them lightly in the melted butter for ? hour.
  • Heat the milk.
  • Add the dry flour to the onions, stirring constantly for 3 minutes.
  • Then turn the mixture into the milk and cook for 15 minutes.
  • Strain, reheat and add salt.
  • Beat the egg-yolks with the cream, then stir into the soup.
  • Cook for a few minutes, stirring constantly and not allowing to boil.
