Enjoy this homemade cucumber soup with white stock, pint milk,egg yolk and butter as the main ingredients.

Cucumber Soup Recipe

Ingredients:
2 large cucumbers
1 quart white stock
1/2 pint milk
1 oz. Butter
2 egg-yolks
pepper and salt

How to make {actual-title}:
  • Peel the cucumbers, take out seeds, cut into slices.
  • Melt the butter and in it fry the sliced cucumbers lightly, without browning them.
  • Add stock, bring to the boil and simmer until the cucumber is tender.
  • Rub through a hair sieve and return to pan, season with salt and pepper.
  • Beat the egg-yolks, stir them into the milk, then gradually add the milk and egg mixture to the cucumber puree, stirring.
  • Reheat, but do not allow to boil.
