Tempting hot and easy to prepare soup made with haricot beans, celery, white stock, bacon rinds and mace.

Haricot Beans Soup Recipe

Ingredients:
8oz. Haricot beans
1 onion
1 stick of celery
1 quart white stock
a few bacon rinds
1 gill milk
1/2 oz. Butter
blade of mace
pepper and salt

How to make {actual-title}:
  • Wash the beans thoroughly, soak in water overnight, then rinse well, put with blade of mace, cut up celery, bacon rinds and sliced onion into a pan with the butter and cook for a few minutes.
  • Add the stock, cold, and bring to the boil.
  • Simmer gently for about 2 hours, stirring now and again.
  • Rub through a sieve, then return to the pan, adding the milk and pepper and salt, stirring well all the time.
