Appetizing flavor of mushrooms ketchup, carrot, onion, bouquet garni, bone stock, dripping and ox kidney in this homemade kidney soup.

Kidney Soup Recipe

Ingredients:
1/2 lb Ox kidney
1 quart brown or bone stock
1 oz. flour
1 oz. dripping
bouquet garni
small turnip and carrot
large onion
pepper and salt
mushroom trimmings or 1 tblspful mushroom ketchup

How to make {actual-title}:
  • Wash and cut the kidney into pieces, removing all fat.
  • Wash and peel the vegetables, cut them up and fry them with the kidney in the hot fat until brown.
  • Add the stock and bring to the boil.
  • Skim well.
  • Simmer very gently for two hours.
  • Rub the kidney and vegetables through a sieve and put back in the saucepan.
  • Make the flour into a paste with a very little water and pout into the stock, stirring well.
  • Add bouquet garni and boil for a few minutes.
  • Season, add mushroom trimmings or mushroom ketchup and, if liked, a glass of sherry just before serving.
