Leek And Potato Soup Recipe

Ingredients:
2 leeks
1 oz. flour
1/2 pint milk
salt and pepper
2 or 3 potatoes
1 quart water
1 onion
1 oz. butter

How to make {actual-title}:
  • Melt the butter in a saucepan, stir in the flour and cook for a few minutes, then, gradually add the milk, stirring as it comes to the boil.
  • Add the water, the potatoes, peeled and cut up, and the leeks and onion cut small.
  • Bring to the boil and simmer gently for 20-30 minutes until the vegetables are tender.
  • Put through a coarse sieve, pressing the vegetables through, return to the saucepan, reheat, season and serve.
