Low Fat Carrot Cake Recipe

Ingredients:
2 cup All purpose Flour
2 tsp Cinnamon
1 tsp Baking powder
1 tsp Baking soda
3/4 tsp Salt
1/4 tsp Nutmeg
1 pn Cloves
1 1/2 cup Sugar
1 (8 oz can) Pineapple (crushed)
3 tblsp Vegetable oil
1 tsp Vanilla
3 cup Carrots (shredded)
3 large Egg whites

How to make {actual-title}:
  • Line a baking pan with foil.
  • Coat the pan with vegetable cooking spray.
  • In a bowl, mix flour, cinnamon, baking powder, baking soda, salt, nutmeg and cloves.
  • Mix sugar, pineapple, oil and vanilla in mixer till smooth.
  • Beat in dry ingredients to just combine.
  • Combine in carrots.
  • Stir well.
  • Beat egg whites in a mixer bowl to form stiff peaks.
  • Fold into carrot mixture in 2 batches.
  • Pour batter into pan.
  • Bake it in a preheated oven at 350 degrees F for about 40 minutes.
  • Let it cool on wire rack.
  • Invert cake onto wax paper.
  • Remove pan and foil.
