Evergreen taste and easy to make mushroom soup with vinegar, pint milk and bouquet garni.

Mushroom Soup Recipe

Ingredients:
1/2 lb. Mushroom
2 oz. butter
1 tblspful vinegar
2 oz. flour
1/2 pint milk
bouquet garni
salt and pepper

How to make {actual-title}:
  • Cover the washed but not peeled mushrooms with cold water and a tblspful of vinegar.
  • Bring slowly to the boil and simmer gently until mushrooms are soft enough to be rubbed through a sieve.
  • Return the resulting puree to the pan and keep hot.
  • Now melt the butter, stir the flour into it and gradually add the milk, stirring all the time.
  • Season with salt and pepper and a bouquet garni tied up in a muslin bag.
  • Bring to the boil and boil for 3 minutes.
  • Then add the mushroom puree.
  • Stir well and serve hot with fried croutons.
