Enjoy this crumb cake made with flour, vanilla, butter, pneapple pieces and flavoured with cinnamon.
Pineapple Crumb Cake Recipe
Ingredients:
2 1/2 cup All-purpose Flour
200g softened Butter
1 1/4 cup Sugar
1 Egg
3 Egg yolks
1/4 tsp Cinnamon
1 tsp Vanilla
1 tsp Baking powder
1 medium Pineapple (around 2 lb)
How to make {actual-title}:
- Beat 100 g butter and 3/4 cup of the sugar till it becomes fluffy in a large mixing bowl.
- Add 1 egg and continue beating until blended well.
- After that add the egg yolks beaten well.
- Mix vanilla into it.
- Sift 1 1/4 cup flour and baking powder.
- Stir into the butter mixture.
- Next butter a round cake pan and line the bottom with waxed paper.
- Pour the batter evenly spread into the prepared pan.
- Quarter and core the pineapple after cleaning skin and eyes from the pineapple.
- Cut the quarters crosswise into 1/2 inch thick slices.
- Arrange the slices in concentric circles, overlapping slightly and leaving margin of around 1 inch around the edge.
- Melt the remaining 100g butter in a saucepan over low heat and let it cool.
- Mix remaining 1/2 cup sugar, 1 1/4 cup flour and cinnamon in a mixing bowl.
- Pour the melted butter over the flour mixture and rub together to form pea-size crumbs.
- Evenly spread crumbs over the pineapple and batter.
- Bake the cake for 55 to 60 minutes in a preheated oven at 350F and let it cool.
- Pour onto a plate and remove the paper.
- Let it for cooling.
- Serve it warm or at normal temperature.
