Tasty tomatoes mixed with lean beef, bouquet, onion, turnip, eggs and peppercorns

Tomato Beef Soup Recipe

Ingredients:
2 lb. ripe tomatoes
1/2 lb. Lean beef
3 pints good stock
Bouquet garni (see Brown Stock)
Pepper, salt and sugar to taste
1 onion
1 turnip
6 peppercorns
whites and shells of 2 eggs
1/2 cup cold water

How to make {actual-title}:
  • Cut the tomatoes, onion and turnip in quarters and put them into a saucepan with the bouquet garni, peppercorns and stock.
  • Mince the beef finely and mix with it the cold water.
  • Put this with the vegetables.
  • Whip the egg-whites, crush the shells and add to the rest of the ingredients in the saucepan.
  • Bring slowly to the boil, whisking all the time.
  • Simmer for 30 minutes, strain through a cloth, then return to the saucepan, reheat, season and dissolve in it one lump of sugar.
  • Serve with slightly whipped cream or grated Parmesan cheese, according to taste.
